Cookies For Breakfast?!

Cookies for breakfast?! Sign me UP! These are healthy and so tasty. They are really closer to granola bars but when you make them round they're called cookies in my book. There is no sugar in them (besides the natural sugar from the honey and what not). They are such a great thing to have around for a rushed morning when you need a grab and go breakfast. These cookies are also perfect to have around for those times when you need a dessert but don't want to make a full commitment to eating something that is "bad" for you." This recipe that I created makes a big batch so I put half of them in the freezer. I put a couple in a ziplock so that I would be able to grab them and pop them into my purse to take on the go in the future. Give this recipe a try and let me know what you think!

Ingredients:

5 T coconut oil

2/3 cup honey

2 eggs (at room temperature)

2t vanilla extract

1 cup whole wheat flour

4t cornstarch

1t salt

4t cinnamon

2t baking soda

3cups oats

1/2 cup chopped pecans

1/2 cup unsweetened coconut flakes

1/4 cup white chocolate chips

1/4 cup semi sweet chocolate chips

Directions:

Preheat the oven to 350 degrees

Melt the coconut oil in a small pot over low heat

Turn off the burner and let the coconut oil cool down a little bit

Add the honey, eggs and vanilla to the pot and whisk to combine the ingredients

In a bowl, combine the dry ingredients (the rest of the ingredients)

Add the wet ingredients to the dry ingredients and stir 

Scoop the dough into one inch balls on a baking sheet

Bake for 7-9 minutes

Place on a cooling rack
