Delicata Squash Recipe

You guys, this was the best thing I've made in a while. I'll tell you why: it was stupidly easy, SO delicious, uber cheap and really healthy. My husband and I honestly can't get over how good it was, especially since it's something that grows from the ground! The season for delicata squash is pretty short so as my husband said, "we need to live it up" #marriedlife. But seriously, I'm pretty sure you guys will now see me making this weekly on Insta Stories and I'm not even sorry. These delicate squash were only 99 CENTS at Trader Joe's. I also got my usual Lemon Pepper Grinder there so it brought this recipe down to 5 ingredients. Please make them and tell me how much you love them afterwards! 

RECIPE

INGREDIENTS: 

4 delicate squash  

Fresh rosemary  

1 T tumeric 

2 T olive oil 

1 T lemon pepper grinder's mixture (or divide this up into dry minced garlic, pepper and salt).  

DIRECTIONS:

Preheat your oven to 400 degrees  

Slice each squash lengthwise  

Use a spoon to scoop out all of the seeds and darker gunk from the center of each squash.  

Slice down each half of the squash so that they look like little 1 inch wide 'U's. 

Place them on a baking sheet.  

Brush olive oil all over both sides of the squash pieces.

Sprinkles the tumeric and lemon pepper grinder all over the pieces. 

Break up the rosemary and sprinkle it on top.  

Bake for 45 minutes (technically you should probably flip them half way through but I didn't and they were totally fine).
