Pie Ice Cream Sandwiches


I'm not going to lie to you guys, I took a lotttt of short cuts on this one. I knew that the assembly of these apple pie ice cream sandwiches would take some time so I decided to devote my efforts to that. Its really such a cop out that I used Apple Pie filling from a can but there is such a small amount of it that I gave myself the pass. I think that sometimes we have to do that or we just avoid the project all together. If you're up for it though, my home made apple-pumpkin butter-pie is incredible and the recipe can be found here. I also used pre-made pie dough that I bought in the refrigerated section of my grocery store. I really like the Immaculate Baking Company pie crust. All of the tools that I used are linked below under 'Shop The Post.'


1 pint of vanilla ice cream

Immaculate Baking Company pie dough

1 can of apple pie filling (or whatever pie filling you like)

1 egg


Lay out the dough on a flat surface on top of parchment paper. Use cookie cutters to cut out whatever shapes you'd like. 

Put a spoonful of pie filling into the center of the pie dough shape. Put another piece of dough on top of it. Then, take a fork and press down the edge of the dough to seal it. 

Whisk an egg in a small bowl. Use a pastry brush to lightly brush egg on top of each little pie.

Bake according to pie crust directions. 

Once the pies have cooled completely, take the ice cream out of the freezer and let it thaw a little bit. 

Scoop ice cream on top of one of the little pies and then put another little pie on top of the ice cream. Gently push it together. 

Serve immediately or store in the freezer in an airtight container until you are ready to eat it.
