St. Patrick's Day Treats

I'll be your lucky charm forever if you make these fun treats! Obviously you can always take the easy way out and dye your food green in celebration for St. Patrick's Day but I wanted to get a little more creative. Who doesn't love bright and cheerful desserts?! These look like they were made by unicorns! Regular ol' me made them but they are still magical because you don't have to bake either of them. They are both so fast and easy to make. In fact, they might be too easy because now I keep wanting to make them again. My favorite part is eating both of the treats while they are still hot! Find your own personal pot of gold through these recipes...

Lucky Charm Krispies

Ingredients:

1 box of Lucky Charms cereal

1 bag of mini marshmallows (I use Dandies brand because they are vegan, gluten free and gelatin free)

6T unsalted butter

Directions:

Melt the butter in a saucer/pot over low heat

Once all of the butter is melted, add in half the bag of marshmallows and stir. Once those marshmallows melt, add in the other half of the bag and stir. 

Once all of the marshmallows melt and combine into one entity, turn off the heat.

Then, gradually add in the cereal. Continue to stir throughout this process.

Spray a pyrex dish with coconut oil and spread the mixture into it. 

Once it has dried, you can cut it into pieces and enjoy! 

Pot of White Gold

Ingredients:

1 box of Chex cereal

1 bag of white chocolate chips

Rainbow sprinkles

Directions:

Line a couple of baking sheets with parchment paper.

Spread the cereal evenly throughout each of the baking sheets.

Melt the white chocolate in a sauce pan over low heat. Continuously stir the chocolate. 

Pour the chocolate over the cereal evenly.

Scatter sprinkles over the chocolate while the chocolate is still hot.

Place baking sheets in the refridgerator to chill and harden for an hour.
