Peach Crisp


This is the PERFECT September dessert! Peach season is still going strong and I wanted to take advantage. The peaches provide a fresh taste that is perfect for that last leg of summer feel. The warm dessert makes it cozy for fall! Top it off with some vanilla ice cream or frozen yogurt and it's bound to make you smile! I loveeeee a good hot-cold combo. I keep my frozen yogurt in a seperate bowl and get each bite with some yogurt, topping and peach. I like doing this because then the ice cream/frozen yogurt doesn't melt and you actually get to eat it. Try this recipe and you won't regret it! 


1/2 cup whole wheat flour (or white flour will do)

1/2 cup quick cooking oats 

1/2 cup brown sugar 

1/2 t baking powder 

1/4 t cinnamon  

Dash of salt

Dash of nutmeg  

1/3 cup unsalted butter

6 ripe, yellow peaches  

1/4 cup powdered stevia  

1/2 t vanilla extract  


Let the butter come to room temperature and cut it into small pieces. 

Cut the peaches into small chunks  (approximately 1-2 square inches).

Place the peaches in a bowl with the stevia. Mix and let sit for at least 20 minutes.  

In another bowl, combine the flour, brown sugar, oats, baking powder, cinnamon, salt and nutmeg  cut the butter into the mixture with a pastry blender  (if you don't have a pastry blender you can use two forks). 

Add the vanilla extract to the peaches and then place them in a baking dish.  

Spread the crumb topping in a layer on top of the peaches.  

Bake at 350 degrees for approximately 35 minutes.
