Clean Eating Pancakes

I LOVE breakfast food! It’s no surprise because I have a sweet tooth. However, the cleaner that I eat, the crappier I feel when I eat all of the carb-loaded breakfast foods like pancakes, waffles, french toast...They tend to put me in a slump without energy. Not to mention I get hungry so soon after eating them. While I’m never going to give up a special pancake while out at a legit brunch, I am into making this recipe at home. It’s gluten free, has protein, is void off fake sugar and is actually really, really good. Trust me, it’s taken a longgggg time to find the right protein pancake recipe that sang the tune to my song! I am sharing this recipe so that you don’t have to go through all of the disappointments that I did with failed attempts! I top mine with vegan butter or ghee plus organic maple syrup (that I heat up because #diva) typically. It’s also great with berries, unsweetened coconut flakes, honey...you name it. These are gluten free and vegetarian but they can also be made vegan by replacing the eggs with flax eggs. You can double this batch to have enough for both weekend days or to feed a hungry guy like the one in my house!

INGREDIENTS:  

1 ripe banana

2 eggs

1/2 cup egg whites

1/2 t ground cinnamon   

4 t baking powder  

2 scoops protein powder  (I use Orgain or Tone it Up)

1 cup rolled oats

2 T ground flaxseed  

Coconut oil spray  

Toppings and/or inserts of your choice  

DIRECTIONS: 

Combine all of the ingredients in a blender on medium speed until it is totally mixed. Put a nonstick griddle over medium heat until the entire pan is hot. Spray with coconut oil spray and then pour batter into circles. Include any additions (bananas, blueberries, chocolate chips...) if you desire. When the edges of each pancake looks like its cooked, turn it over. Top with whatever toppings you desire and enjoy!

Healthy Homemade Granola

You know how granola makes all breakfast foods better?! I could sprinkle it on every breakfast item but I especially like/NEED it on my yogurt parfaits and acai bowls. Let's be real, I also shove it in my mouth solo while standing over the kitchen sink (things happen). By swapping the butter for coconut oil and only including natural sugars, I can avoid all of the associated guilt (okay, maybe not for the sink scenes but for the rest). This recipe includes multiple superfoods that are great for anything from brain to nail health. Basically, this recipe is your key to your next promotion and the man/woman of your dreams. In those dreams your lover can even feed you granola!

Ingredients:
3.5 cups oats (I use Bob's Redmill gluten free rolled oats)
1 cut slivered almonds
1 cup organic unsweetened coconut flakes
2 T cinnamon
2 T chia seeds
1 cup pressed organic coconut oil
1/2 cup pure A grade organic maple syrup
2 T pure vanilla extract

Directions:
Preheat oven to 350 degrees.

In a mixing bowl, combine oats, nuts, coconut flakes, cinnamon and chia seeds.

Combine coconut oil, maple syrup and vanilla in a small saucepan. Stir over low heat until it is combined.

Pour the wet ingredients over the dry ingredients and stir until it is combined.

Spread the mixture evenly on a baking sheet and bake for 30 minutes.

Toad in a 'Cado

We all know the tried and true healthy breakfast options. It's not like I'm suggesting that you break up with oatmeal for life or anything but once in a while it's nice to give something else a chance. Don't worry Jay, these rules don't apply to our impending marriage! 

I took the idea of a toad in a hole and gave it a twist in order to cut down on the carbs. I also added a tiny bit of cheese and organic turkey bacon for some extra flavor. Try it out and let me know what you think! Let's all contribute to the avocado shortage together, one toad in a 'cado at a time!

Ingredients:

1 ripe avocado

2 eggs 

1 strip of turkey bacon

2 T shredded Colby cheese

Pepper

Himalayan sea salt

Directions:

Preheat the oven to 350 degrees

Cook the turkey bacon in a fry pan over medium heat until it is halfway cooked.

Slice you avocado in half and remove the pit by ninja chopping it with a knife. 

Scoop out some avocado from each half to make room for the egg.

Cut your bacon into small squares.

Place both avocado halves onto a baking sheet facing upwards. Crack an egg into each avocado hole. 

Top your egg with the cheese and turkey bacon. 

Place the baking sheet into the oven for 7-10 minutes or until you don't see any clear egg whites anymore.

Season with salt, pepper and/or hot sauce and enjoy!

 

Cinnamon Roll Waffles

The hack to an easy to impressive AND easy breakfast is a waffle iron. Obviously waffles are amazing (especially when they have ice cream)! Waffle irons can be used to cook so many other items though. Try using your waffle iron to make cute biscuit egg sandwiches. It's like a breakfast panini! You can use your waffle iron to make hash brown "waffles" as well. However, the BEST thing that you can cook in a waffle iron is a cinnamon roll. Cinnamon roll waffles are actually better than cinnamon rolls that are cooked in an oven (not that I'm saying I don't LOVE baked cinnamon rolls ...I mean I'm not THAT crazy). The waffle iron method is way faster, which becomes increasingly important to you once you're surrounded by all of the cinnamony smells. The cinnamon roll waffles are crisp on the outside and soft and doughy on the inside. The little square pockets are perfect for holding a blend of icing and syrup. A baked good that's also good at organizing things?! That's the stuff that love songs are written about. Best of all, it's a joke to make. It's the perfect last minute brunch because it requires zero prep and such minimal work when you cheat and buy the canned cinnamon rolls.

Step 1: Preheat your waffle iron
Step 2: Spray coconut oil, canola oil or whatever your "non stick" go to is. Go big and spread melted butter on it if you want to!
Step 2: Place one cinnamon roll in each square of the waffle iron. Close the iron and wait a minute or two (until it is lightly golden brown on the outside)
Step 3: Spread icing on top of the waffle and then pour syrup on top of it
